Garlic Confit

                                    Ingredient                                                     Amount

                                    Garlic, peeled                                                  2 cups

                                    Thyme, fresh                                                   6 sprigs

                                    Bay Leaves                                                     2 each

                                    Chile de Arbol                                                2 each

                                    Olive Oil                                                         2 cups


  1. Place all the ingredients into a sauce pan and simmer over low heat until the garlic becomes tender (~30 minutes). Otherwise, preheat an oven to 350F and place all the ingredients in a 9×5 loaf pan and cover with foil—cook until tender, roughly 45 minutes-1 hour.
  2. Once tender, allow the mixture to cool and place in sterile glass jars with the oil on top of the garlic. Keep in the refrigerator until ready to use.
  3. Before using: remove the bay leaves and thyme. Remove the chiles as well if you do not want additional heat.
