- 2 cups Garlic, peeled
- 6 sprigs Thyme, fresh
- 2 Bay Leaves
- 2 Chile de Arbol
- 2 cups Olive Oil
- Place all the ingredients into a sauce pan and simmer over low heat until the garlic becomes tender (~30 minutes). Otherwise, preheat an oven to 350F and place all the ingredients in a 9x5 loaf pan and cover with foil—cook until tender, roughly 45 minutes-1 hour.
- Once tender, allow the mixture to cool and place in sterile glass jars with the oil on top of the garlic. Keep in the refrigerator until ready to use.
- Before using: remove the bay leaves and thyme. Remove the chiles as well if you do not want additional heat.
