Cucumber & Tomato Salad

Ingredient                                                                 Amount 

Quinoa, cooked                                                              2 cups

Cucumbers, diced                                                         2 cups

Tomatoes, diced 2-3 each, ~                                      3 cups

Basil Leaves, sliced or torn                                        ΒΌ cup

Lemon zest & juice                                                      of 1 lemon

Salt                                                                                To taste

Olive Oil                                                                       To taste (~1/4 cup)

 

Method:

  1. Place cooked quinoa, diced cucumbers and tomatoes into a bowl. Add the basil, lemon zest, juice, and season with salt to taste.
  2. Add enough olive oil to coat salad in a thin layer of oil and allow to marinate at least 30 minutes. Serve and enjoy. This salad can be made ahead, but cover and refrigerate if keeping longer than 4 hours
