Dengaku Sweet Potatoes
Sweet potatoes, diced 8 cups
or cut into equal sizes
Oil 2 tsp
Salt as needed
White Miso 1/3 cup
Sake 2 Tbsp
Mirin 1 Tbsp
Honey 2 tsp
Sesame seeds as needed
Scallions, cut thinly on a bias 1-2, as needed
- Preheat an oven to 375F. Line two baking trays with parchment and toss sweet potatoes in the oil and season with salt.
- Place onto the baking trays, making sure not to overcrowd the pans and roast until tender, roughly 20-35 minutes, depending on size.
- While the sweet potatoes are roasting, mix together the miso, sake, and miring in a small bowl. Once the sweet potatoes are just tender: toss the mixture onto them to coat. Continue to bake for another 3-7 minutes, until the dengaku begins to thicken and brown slightly. Remove from the oven and allow to cool for a minute or two. Season to taste.
- Place the sweet potatoes in a serving bowl and garnish with the sesame seeds and scallions. Serve and enjoy.
