Dengaku Sweet Potatoes

Ingredient                                        Amount 

Sweet potatoes, diced                      8 cups
or cut into equal sizes

Oil                                                        2 tsp

Salt                                                      as needed

White Miso                                        1/3 cup

Sake                                                     2 Tbsp

Mirin                                                   1 Tbsp

Honey                                                  2 tsp

Sesame seeds                                     as needed

Scallions, cut thinly on a bias        1-2, as needed


  1. Preheat an oven to 375F. Line two baking trays with parchment and toss sweet potatoes in the oil and season with salt.
  2. Place onto the baking trays, making sure not to overcrowd the pans and roast until tender, roughly 20-35 minutes, depending on size.
  3. While the sweet potatoes are roasting, mix together the miso, sake, and miring in a small bowl. Once the sweet potatoes are just tender: toss the mixture onto them to coat. Continue to bake for another 3-7 minutes, until the dengaku begins to thicken and brown slightly. Remove from the oven and allow to cool for a minute or two. Season to taste.
  4. Place the sweet potatoes in a serving bowl and garnish with the sesame seeds and scallions. Serve and enjoy.
