Moroccan Spiced Sweet Potatoes
Sweet Potatoes, sliced lengthwise 8 cups
Olive Oil 3 Tbsp, divided
Cumin, ground ½ tsp
Cinnamon, ground ½ tsp
Smoked Paprika ¼ tsp
Salt as needed
Orange Zest from 1 orange
Parsley, chopped ½ cup
Mint, torn ¼ cup
- Preheat an oven to 375F. Line two baking trays with parchment and toss sweet potatoes in half of the oil, and all of the cumin, cinnamon, smoked paprika, and salt to coat.
- Place onto the baking trays, making sure not to overcrowd the pans.
- Bake until golden brown and tender, roughly 20- 30 minutes.
- Toss with orange zest, remaining oil, parsley, and mint. Season to taste, serve, and enjoy.
