Shaved Brussel Sprouts Salad

Shaved Brussel Sprouts Salad

Ingredients

  • 24 oz ----- Brussels Sprouts, shredded
  • 1/2 cup ----- Red Onion, sliced
  • 2/3 cup ----- Dried Cranberries, unsweetened
  • 2/3 cup ----- Sliced Almonds, toasted
  • 4 oz ----- Goat Cheese, soft & crumbed, (optional)
  • 1 cup (1x recipe) ----- Citrus Vinaigrette
  • Citrus Vinaigrette:
  • 1 each ----- Orange, juiced and zested
  • 1 each ----- Lemon, juiced and zested
  • 2 Tbsp ----- Shallots, minced
  • 1 tsp ----- Dijon Mustard
  • 3/4 cup ----- Olive Oil
  • 2 tsp ----- Thyme, minced
  • to taste ----- Salt and Black Pepper

Instructions

  1. Shred Brussels sprouts using the shredding blade of a food processor, or slice thinly with a knife.
  2. Place Brussels sprouts in a large bowl and combine with chopped red onion, cranberries, almonds and optional goat cheese.
  3. Whisk together vinaigrette ingredients.
  4. Add vinaigrette immediately before serving and toss well to coat.

Notes

-The fresh thyme in the dressing may be replaced with an equal amount of tarragon, basil, rosemary or oregano or 1 tsp. dried herbs of choice -You can substitute green, red, or napa cabbage for the Brussels Sprouts and shred thinly
