- 4 cups Strawberries, finely chopped
- ¾ cup Sugar
- 1 ½ Tbsp Lemon juice
- 1 tsp Vanilla Extract
- Pinch of Salt
- Combine the strawberries, sugar, lemon juice, salt, and 2 tablespoons water in a saucepan. Cook over medium heat, stirring occasionally, until the berries break down and become tender, about 10 minutes. Remove from the heat; stir in the vanilla.
- Run/push through a fine-mesh strainer into a bowl, pressing against the solids; let cool completely. To store, cover and refrigerate up to 4 days.
