Walnut Whole Wheat Pastry Crust
Walnuts, chopped finely ¼ cup
Sugar 1 Tbsp
Salt ¼ tsp
Whole Wheat Flour 1 cup
All-purpose flour ½ cup
Unsalted butter, chilled 10 Tbs
Water, ice cold 7 Tbs
White vinegar 1 tsp
- In a large bowl, mix walnuts, sugar, salt, and flours. With clean hands, rub the butter into the flour mixture until the oil is pea size.
- Once the butter has been incorporated, sprinkle the water and vinegar over mixture. Mix by hand until the dough just comes together. Press into a disk and cover with plastic wrap . Refrigerate for about 30 minutes.
- Unwrap dough on a lightly floured surface. Roll into 11 x 8 inch rectangle. Fold like a letter, using a bench scraper if necessary. Turn 90 degrees, roll out again and fold. Repeat 2 more times. After last fold, fold the dough in half to create a small square. Wrap in plastic wrap and let rest in the refrigerator for another 30 minutes or up to 2 days.
