Walnut Whole Wheat Pastry Crust

Ingredient                                                         Amount 

Walnuts, chopped finely                                     ¼ cup

Sugar                                                                      1 Tbsp

Salt                                                                         ¼ tsp

Whole Wheat Flour                                            1  cup

All-purpose flour                                                ½ cup

Unsalted butter, chilled                                   10 Tbs

Water, ice cold                                                    7 Tbs

White vinegar                                                    1 tsp


  1. In a large bowl, mix walnuts, sugar, salt, and flours. With clean hands, rub the butter into the flour mixture until the oil is pea size. 
  2. Once the butter has been incorporated, sprinkle the water and vinegar over mixture. Mix by hand until the dough just comes together. Press into a disk and cover with plastic wrap . Refrigerate for about 30 minutes.
  3. Unwrap dough on a lightly floured surface. Roll into 11 x 8 inch rectangle.  Fold like a letter, using a bench scraper if necessary. Turn 90 degrees, roll out again and fold.  Repeat 2 more times. After last fold, fold the dough in half to create a small square. Wrap in plastic wrap and let rest in the refrigerator for another 30 minutes or up to 2 days.
