In this hands-on class, guests will explore a delicious gluten-free take on a classic Italian favorite. Instead of traditional pasta, we’ll use thinly shaved zucchini to create manicotti—where the manicotti refers to the filled pasta shell, reimagined here as a fresh, flavorful vegetable wrap.

Participants will learn how to craft creamy ricotta from scratch and experience Chef Blake’s signature whipped goat cheese recipe. To round out the meal, guests will prepare festive meatballs using high-quality Turner Farm pork and finish by topping and baking their own focaccia for a complete and satisfying dinner.

This class also includes a full dining experience, featuring a seasonal appetizer, freshly baked bread and butter, a sweet ice cream dessert, and wine to enjoy alongside your meal—making it both an educational and indulgent culinary evening.
