A well-made chicken stock is the backbone of countless dishes, providing depth, richness, and complexity to soups, sauces, and braises. In this hands-on class, you’ll learn the fundamentals of crafting a flavorful, homemade stock from scratch. We’ll explore ingredient selection, techniques for extracting maximum flavor, and the key differences between white and brown stock.

Participants will gain practical experience in preparing stock, balancing aromatics, and mastering simmering techniques. We’ll also cover essential tips on straining, storing, and using stock to elevate everyday cooking.

Since an entire stock requires extended simmering, we’ll have a finished batch ready for tasting and comparison while students start their stock to take home. By the end of the class, you’ll leave with a quart of your freshly made stock and the confidence and knowledge to make this essential kitchen staple anytime.

Menu:

Main Course:

• Pho Gà – Traditional Vietnamese chicken noodle soup with aromatic broth, tender poached chicken, rice noodles, and fresh herbs.
• Fresh bean sprouts, Thai basil, cilantro, lime wedges, sliced chili, hoisin sauce, and sriracha for customization.
• Vietnamese Pickled Vegetables (Do Chua) – A tangy, crunchy mix of pickled carrots and daikon to complement the soup.

Dessert:

• Pandan Coconut Jelly (Rau Câu La Dua) – A delicate, lightly sweetened coconut and pandan jelly, served chilled for a refreshing finish.

Beverage Pairing:

• Chrysanthemum & Honey Iced Tea – A subtly floral, naturally sweet tea known for its calming and digestive Aid. 

Charcuterie boards and wine provided.
