·       Build a rich sofrito base and achieve the prized socarrat (crispy rice crust)

·       Whip up a bold, garlicky aioli to serve on the side

·       Sofrito preparation and layering ingredients

·       Rice timing, liquid management, and achieving socarrat

·       Garlic aioli emulsification

Hands-On Dinner Menu:
